Pate a Choux: Sweet and Savory (Vermont)

In this class you'll learn how to make the very versatile light and airy pastry called pate a choux. Additionally, you'll tackle two fillings, one sweet and one savory. The puffs are filled with a delicious citrus and cream filling and for added texture and visual appeal, learn how to finish them with a decadent craquelin topping!

Then you'll create a rich, cheesy filling flavored with the subtle heat of pickled jalapenos to make jalapeno popper puffs. You'll leave with the skills to create these varieties and more!
